It was a great night in. I got to hang out with my boys - Daddy and Talal. Although they were recommending healthy food, I was really REALLY in the mood for comfort food. Weird, right? I'm usually the one who asks for healthy food. So, I ran to the store with Talal for the things for a big bowl of curry. I got a little curried away and I got: fresh basil, carrots, potatoes, chicken, snow peas, mushrooms, and bamboo shoots.
I fried the onion in oil and added the chicken. From then on, everything was on high heat. I put the hardest veggies first and continued until everything was tender. Then, I added 3 heaping tablespoons of green curry paste, a small spoon of sugar, and 2 cans of coconut milk. The most important note is to use the regular, full fat milk. For my experience, the light milk is too watery for the dish. You lose all the creaminess and instead, end up with flavored water that isn't worth the time, effort, or calories.
