When we finally ring in the new year - whether it's your resolution or not - it's finally time to get back to eating more vegetables and drinking less cocoa. Now, in Houston, that's not so hard. Our winter has averaged about 75 degrees so far. Practically summer.
The simplest thing to prep for work day lunches are salads. Grab a box of greens, shredded carrots, grape tomatoes, peppers, any cheese you like and throw them into a container. These can last in the fridge for a few days. Why is that? They aren't dressed.
Keep a bottle of you favorite dressing at your desk. Obviously, if you want to be healthy, you should opt for a vinaigrette and leave the ranch behind.
Another great tip is to use an insulated lunchbox to avoid the yucky office fridges. Unless you bring something that desperately needs refrigerating, you can just keep it packed away at your desk - making it super low maintenance and unstealable in an office fridge.
