One day, it just hits you that you haven't had any vegetables in quite some time. Just because you need to eat your greens doesn't mean it has to be boring.
I decided to make a wedge salad - a favorite of ours - with a fun twist. Do you know how when you order wings, you get celery and carrots with a side of blue cheese or ranch dip? I decided to make some variation of that on a salad.
I made some simple chicken meatballs and seared them on all the sides. Once done, I poured out the fat at the bottom of the pan and threw in a few tablespoons of butter and a vinegar-based hot sauce, shaking the pan frequently to coat the balls all around.
The wedge also had some wing-inspired toppings - diced carrots, celery and bell peppers. To really bring the theme home, I served it with blue cheese crumbles and blue cheese dressing.
