I woke up and early on Saturday and decided that I no longer liked the menu I had built weeks ago for the dinner tonight.
I partly relied on my new-found obsession with Bon Appetit magazine to select new items for my menu. Last night, Talal and I had a delicious Key Lime Pie. It still made my mouth water just thinking of it. That's why, when I saw this Lime Custard, I knew I had to make it. I almost completely followed the recipe. I nixed the lychee and added half of a vanilla bean to the cream and sugar mixture.
2 limes, zest removed in wide strips
Pinch of kosher salt
½ cup plus 1 tablespoon sugar
2 cups heavy cream, divided
⅓ cup fresh lime juice
½ vanilla bean
In honor of the key lime pie, I decided to make this a deconstructed pie. I crumbled up graham crackers and shaved white chocolate for the top of the custard. The final product was "heavenly." Ohaila's words, not mine.
