When I'm home alone and I want to treat myself to some comfort food as I peruse a magazine or watch endless hours of the Food Network, I like to whip up this satisfying (and not so light) chicken salad that is inspired by my mom. You can whip it up pretty quickly if you have the ingredients and some good crackers to eat it with.
Yara's Curried Chicken Salad
1 Cup Red Grapes, halved
2 Chicken Breasts, Cooked and Cubed
3 Stalks Celery, diced
3 Tbs. Fresh Tarragon
½ Cup Roasted Cashews
1 Cup Mayonnaise
Curry Powder (to taste)
Mango Chutney (to taste)
All you really have to do is mix everything together with a spatula and begin chowing down. Easy peasy!
