Dinner in South America

I spent 2 years with this group of people. We spent hours together; day in and day out. We've cried together. Laughed together. Goofed off together. So much has happened over that time. I've grown tremendously, because they've pushed me to be better and work harder than I ever thought I was capabale of. To commemorate this amazing experience, I invited the group to dinner. Who would have thought that they would almost all be in attendance?!

Professor Le Bon couldn't make it and Christina forgot, but it was a great turn out, otherwise.

My menu: Ceviche, Carne Mechada with Arepas, Carnitas, Stuffed Poblano Peppers, Cilantro Rice, Plantains, Pastel de Choclo, Tres Leches, Chocolate Chili cake, Tex-Mex Salad, and a Chicken Salad. My inspiration came from the weekend I had strep throat. I spent 48 hours watching the Food Network and Anthony Bourdain got= to Chile and Brazil. It merged with wanting to invite all of the SEI team and "ta-da!"

My favorite (by far) was the Pastel de Choclo! It was our first time making it. Frankly, I couldn't even explain it to people. It was onions, cumin seeds, oregano, hot paprika, chopped frozen corn, whole milk, salt, and sugar. It was hot and creamy. A bit like cornbread, but deconstructed. The starch thickened it and it was a great side dish for this meal.

Per usual, left-overs for days!
