Many years ago, mommy and I were home alone for a couple nights. Tina and Daddy were both away. I can't quite remember when or how long ago, but Mommy and I remember making and eating a delicous dinner. We never wrote it down. The only thing we could agree on is that it had pasta and eggplant.
I called mommy on my way to my Adobe Illustrator class at UH. She remembered the pasta and we decided to make it. I grabbed some things from the store and came home. Mommy had started the eggplant and we spent a few minutes going back and forth on what actually belongs in the pasta. Eventually, I just let mommy have her way... and boy was it delicious. It hit the spot!
This time, we won't make the same mistake again. This delicious pasta has eggplant, sundried tomatoes, capers, chicken cooked with dried basil, rotini pasta, and teeny tiny pieces of Kalamata olives. After we started eating, we decided that caramelized onions would be a great addition to the pasta.. or had we put that the last time? We'll never know.
