Out of nowhere one day, I thought to make a Salmon Bowl, inspired by Erica Batterman's Bowl Obsessed Instagram. She always has these delicious, colorful meals that make your appetite roar.
I knew that I wanted to make a salmon with a crispy skin. In addition to that, I'd need something fresh, something acid, and something with a different texture.
I diced and roasted some beets, I pickled some thin onion slices, toasted chick peas, and a little green onion and cilantro relish.
Little did I know that Talal loves these and now requests them all the time!
