The One That Surprised Us

Updated: Jul 21, 2020

Today I made an unphotographed masterpiece. It's been one of those less-rare weeks where I have too much food for the week and equally ambitiously plans to make new meals.

We started the week off with a fridges filled with cooked salmon, kusa, plenty of produce, pasta salad, extra pasta, and 15 Fage yogurts. It's finally Thursday, and I need to make some fresh dinner.

Way back on Saturday ( a measly 5 days ago) I had bought a jar of Bulgarian yogurt and ground lamb. If you remember, it was a smashing success last time I made it. Being that I wanted to efficiently use the perishable itwas in my fridge, I decided on a pasta salad with a side of tzatziki.

Before Talal even finished eating, he asked the best question, "what is this called so I can ask you to make it again?" Even though this post is photo-less, I'm writing it here for memory's sake.

  • 1/2 Diced colored bell pepper

  • 1 small cucumber

  • 5 Campari tomatoes softened on the stovetop

  • Chopped assorted olives

  • 1lb mini lamb meatballs

  • sauteed leeks

Everything was so amazing. The lamb made your mouth water. It didn't need any dressing, because it was also incredibly moist from the tomatoes and the juicy meatballs.

Yes, it definitely surprised us.
