It was the beginning of spring break and Amy's wedding weekend, but it was also the beginning of the spread of coronavirus. At this point, it had already made its way to California and Washington state. Although we were very excited to spend a long weekend in the mountains, we were equally scared of catching the mysterious virus we knew very little about.


We anxiously took our seats on our EARLY morning flight, and quickly sanitized anything and everything in sight. Being careful to sanitize often, Talal and I landed and made our way to the car rental facility. The over-enthusiastic, energetic agent gave us a major upgrade on the car since we were making our way to the icy mountains. He also gave us a couple breakfast recommendations since we planned to spend the day in the city before making the drive up.


We walked around the RiNo district - quiet streets filled with colorful graffiti from local artists. We strolled and walked around until we developed an appetite. We were seated at a small, corner table at Stowaway Kitchen. Looking at Yelp and trying to narrow down the choices was hard, but I eventually settled on the Golden Chai Latte and the Mushroom Tartine. It was simply a very-well-executed mushroom toast. It was beautiful and vibrant dish. A poached egg sat atop plump mushrooms, steamed spinach and thick-sliced toast with beet puree. The whole thing was generously sprinkled with dukkah. I practically licked the plate clean. Frankly, I would have if I didn't imagine mommy staring in disbelief as I did.


After a satisfying meal on a chilly day, we decided to hit the streets again. After popping into a couple shops, we stopped for a drink at Stem Ciders. Yes, it was still early... but it was vacation! We sipped and enjoyed the sunshine. Vail, here we come!
